Low-Carb, Protein-Packed Cauliflower Pizza Crust

Servings: 3

Ingredients: 

  • 1 head of cauliflower or 1 10-oz bag of fresh or frozen cauliflower rice
  • 1 whole egg or two egg whites
  • 1 scoop Naked Pea protein powder
  • ¼ cup grated parmesan cheese
  • ¼ cup shredded low moisture mozzarella cheese
  • ¼ tsp salt
  • ½ tsp oregano
  • ½ tsp garlic powder
  • Freshly ground pepper to taste

Directions:

  1. Preheat oven to 400° Fahrenheit

  1. If using a head of cauliflower, use a food processor or grater to rice the cauliflower. If using a bag make sure it is completely thawed. Steam cauliflower rice in the microwave for 5-7 minutes or as directed on the package and allow to cool.

  1. Using a paper towel or cheesecloth, squeeze all the excess liquid out of the cauliflower.

  1. In a large bowl, combine cauliflower rice with the remaining ingredients and mix until it resembles a dough.

  1. Form the dough into a 10-inch circle on a baking sheet and bake for 8-10 minutes or until lightly browned.

  1. Remove from the oven and top with sauce, cheese, and other desired toppings and place back in the oven on broil for 3-5 minutes.

  1. Let it cool and enjoy!
